Easy White Bean Salad
Serves 2-4
1 can cannelini beans, rinsed and drained
1 small red pepper, diced small
2-3 green onions, sliced thinly
1 lemon, juiced
2 tablespoons extra virgin olive oil
salt and pepper to taste
Combine all ingredients and let stand for a few minutes for flavors to develop before serving.
