Simple Low Calorie Recipe from Sicily’s Planeta Estate Pairs with Chardonnay

Several months ago, I had the great pleasure of attending a wonderful tasting where I had the chance to meet Francesca Planeta and taste the some of the Planeta wine portfolio. Francesca is very dynamic and has been involved in the marketing of the wine as well as the development of the hospitality side of their business.

I asked her to share a recipe that is made there and she sent along this easy fish dish that can be prepared ahead of company or made in smaller amounts (lunch leftovers are good too!)

The recipe comes from La Foresteria the restaurant at estate – check out – and is a favorite family recipe.

Spatola alle erbe mediterranee


4 x white fish fillets (choose a firm but delicate white fish)
1.5 cups extra virgin olive oil (they recommended DOP Val di Mazara Planeta made in Sicily)
2 cups breadcrumbs
3.5 tablespoons parsley
1.5 tablespoons mint
1.5 tablespoons basil
3.5 tablespoons lemon juice
Salt & black pepper to taste

Preparation method:
Flavor the breadcrumbs with the finely chopped herbs, salt and pepper.
Marinate the fish fillets in the oil.
Remove the fillets from pan, coat them in the flavored breadcrumbs and roll them up vertically, without tightening too much.
Bake at 350°F for 15 minutes

Warm the lemon juice and serve on top.
